Barbecued Spareribs:
(1) Meat: about 3 to 4 lbs pork loin back ribs,
(2) Marinade:
1/2 cup soy sauce
1/2 cup brown sugar
1/2 cup ketchup
1 Tb. Sherry wine
1 Tb. ginger juice, or equiv. minced ginger
4 cloves mashed garlic
A dash of MSG(optional)
Note: Increase ginger, garlic to suit taste.
Procedure:
(1) Combine the marinade and mix thoroughly.
(2) Place ribs in a roasting pan, in layers, with the
marinade in between layers. Cover the pan with heavy duty foil.
Marinade the ribs for 3 hours.
(3) Roast the ribs with the marinade at 350 deg. F for 2 hrs.
(Uncover the pan during the last 20 minutes).
After 2 hrs., turn the oven off,
and let the residual heat further cook
the ribs slowly for 25 minutes more; check if it's cooked and tender.
Remove from the oven; Take out the ribs. Discard the
liquid, or save it as a sauce or re-use.
